The report “Strategies to Boost India’s Pickles and Sauces Exports” examines India’s export potential in traditional yet rapidly globalising condiment categories, highlighting the disconnect between a strong domestic base and a relatively modest share in global trade. Despite rising international demand for ethnic, authentic, and fusion condiments, India’s exports of pickles (HSN 200190, 200599) and sauces (HSN 2103) remain constrained by fragmented value chains, low processing intensity, inconsistent raw‑material quality, compliance gaps with international food safety and labelling standards, and weak brand visibility beyond diaspora‑led markets. The study provides a detailed assessment of global demand trends, India’s export performance, price competitiveness, tariff and non‑tariff barriers, and comparative advantage, while identifying key growth markets across North America, the Middle East, Europe, ASEAN, and Australia. Drawing on stakeholder consultations and policy analysis, the report proposes targeted strategies centred on contract farming and cluster‑based processing, development of processable crop varieties, stronger food safety and certification systems, product adaptation to global taste preferences, SME capacity building, infrastructure and logistics upgrades, and strategic use of FTAs. The roadmap aims to reposition Indian pickles and sauces from niche ethnic products to mainstream, value‑added global condiments under the APEDA–ICRIER Knowledge Partnership.
